Ugh, Potluck time again...

Do you have any access to refrigerator or cooler. I make this Mexican layered dip that I keep deconstructed until I get to my destination.

1 can refried beans
Mixture- one packet of taco seasoning, 1 cup mayonnaise, 1 cup sour cream (mix the night before or morning of, then bring in a container)
4 cups of shredded cheese
Chopped tomatoes
Chopped green onions
Optional- can of minced black olives (I hate olives so skip this)
Bag of tortilla chips

Bring a 9x13 casserole dish. Then right before serving layer following the above list starting with refried beans.

For late afternoon, I would not bring munchkins. Buy some small cookies or brownie bites if you want something bite sized.


What's the difference? I'm no more or less inclined to eat brownies than munchkins, and the time of day is pretty irrelevant.

You can’t go wrong with a big tray of bacon wrapped dates, stuffed with farmer’s cheese and smoked almond. These are the first to go whenever I make them.

OP here: believe me, if it were entirely my decision, I would never attend a potluck. And definitely not a late afternoon work one. Thank you collective chefs of DCUM for your ideas and commiseration.

Fruit tray or fruit salad. Squeeze some fresh lemon juice in it to keep things from turning brown.

Do you have to do dessert?

I always appreciate fruit at potlucks. I don't bother with a fancy tray. I swear if I bring a bunch of bananas, some cutie oranges, and some grapes that I wash and transfer to a bowl in the sink at work, they will all be gone by the end.

I’m sorry, I hate to “yuck someone else’s yum” but 1 cup of mayo should not be a part of this dish. You mix the seasoning into the refried beans. Layer of guacamole (not necessary but great), then layer of sour cream, and proceed as mentioned above.

Is it a potluck or a party that people were asked to bring food? Because the latter usually means cookies, brownies, vegetable tray, chips and salsa. So you could buy a bag of tortilla chips and a can of salsa. Or pick up any prepared dessert.

Do not bring a dish that needs to be assembled. Not to a work potluck and absolutely not to someone's home.
