Repurpose leftover salmon

Grate 1 small beet and 1 medium carrot.

Toss with a peanut butter dressing of your choice.

Add salmon.

This is such a "sum of the parts is greater than the whole" salad. My favorite thing to do with leftover salmon. Just remember about the beets the next day.

Blackened salmon salad — basically just the leftover salmon, blackening seasoning, mayonnaise, sweet pickles. I like it as an open-faced sandwich/toast.
