Agree that rhubarb=spring.
OP, if you don't want to go with seasonal traditional choices, go for year round options, something chocolate based perhaps.

One of our family favorites is Chocolate Silk Pie. My niece made this one last year. It was devoured in a nanosecond. She used a recipe from the magazine. I am pretty sure this is the same one.

I’m off pecan pie lately, so I’ve been making lemon chess pie instead for the past couple of years.. It adds a nice brightness.

Plain chess is also nice, and so easy.
