OP here. Thanks for all the suggestions. Think I'm going to try him with the avocado sushi and the ice cream - not at the same time though!

I had chicken arepas at Al Carbon in Rockville and it was so simple I've Americanized and redone it at home when I have leftover roast chicken and leftover guac. I take the chicken pieces and guac hand-blended with onions, stuff them between two slices of bread or pita and voila. It really does take two ordinary things and make them taste like something new.

I like how Sweetgreen does chunks of avocado in salads too, esp with wasabi peas mixed in.

I've had a fantastic dip made of avocado blended with goat cheese. A little olive oil would help it emulsify, I imagine. I bet it would be good with some spice to it, as well. And you could do it as dip, or sandwich spread.
