Does anyone know anything interesting to make with avocados? DS loves them but is getting a bit bored with guacamole. He will eat almost anything, including chilies, so spicy recipes would also be good. TIA.

Have you tried putting it on top of soup? How old is your ds?
I like putting avocado slices inside my sandwhiches ( Turkey,tomatoe, and cheese on french bread)

we made an avocado & tomato salad with a lemon vinaigrette - our DD loved it!

you can put it on sandwiches...or even just eat it plan (we do all of the time)...

it'd be more work, but you can do sushi rolls - the wasabi & pickled ginger would spice it up a bit for him.

I love avacado slices drizzled with a tiny bit of olive oil, a squeeze of lemon, and a bit of salt and pepper. Yum!

DS is 22 months. I give him avocado slices too, but was looking for something a bit more interesting. Perhaps something from South/Central America?

Watermelon and avocado salad. My mom and I made it and it was YUMMO! We cubed watermelon, and a very ripe avocado, sprinkled with salt, pepper and balsamic vinegar. You can add olive oil and spinach if you'd like, but I like it just the way we made it. It doesn't store well, so you have to make just enough to eat.

Eat it sweet, like they do in the Philippines. Mashed into a glass, sprinkled with sugar with milk poured over the top. I know--sounds gross, but it's good. They make ice cream with it over there.

I love sandwiches with meatless bacon, avocado and a dash of salt.

Also, avocados are delicious in omelets.

Half an avocado with lump crabmeat dressed in a lemon or lime vinaigrette is sublime.

Oh and sliced avocado with pink grapefuit sections is also delectable. I had this at Cashion's in Adams Morgan last year.

They make avocado ice cream here, too. Rick Bayless makes it, you can find the recipe online.

Chunks of avocado tossed with pasta and tomatoes - you can use sliced grape tomatoes until the nice ones ripen later this summer.

I love it in a salad but DH says it belongs on a BLT. I have to agree with him.
