We did charro beans with vegetarian chorizo last night. I really need more fall flavor bean recipes. I’d like something that went well with butternut squash and sage.

I can't find the exact recipe I had in mind when I read your post, but this is pretty close.to one I made. Mine might have been all quinoa, and not rice. So, not beans, but good vegetarian protein and similar to the flavors you mention.

Cassoulet. I roll my eyes at the 2-day versions. There is no wrong way to make it. It was everyday poor people’s food that was meant to be made w whatever was on hand. I think chicken thighs and a sausage or two gives it the right level of fat. (I do make with whatever’s left from our Christmas goose or duck, but I wouldn’t cook a duck just to make cassoulet.)

Red beans and rice.
Couple years ago I decided I wanted to come up with a red beans and rice recipe similar to what they serve at Popeyes.
Emeril's recipe does the trick. So good! I just use two pounds of bacon instead of the ham and sausage that Emeril's recipe calls for.
