Do lentils count?
I love a good rice and black lentil bowl. With tomatoes and feta and parsley.
Red lentil dal
Black eyed peas and sausage (i use chicken sausage and buy the peas frozen but uncooked)
White bean and roasted tomato stew

For quick and easy, I love Progresso’s Lentil with Roasted Vegetables soup served over brown rice. It’s so comforting and hearty, especially on bleak, blustery winter days.

I just discovered Trader Joe's canned refried beans. Delicious. I use them in Mexican dishes.

I’ve never tried those, but I like the Old El Paso fat free variety.

I think it was a NYTimes recipe... cook some tomato paste in a skillet, mix in white beans (already cooked), cover in cheese, finish under broiler and eat with nice crusty bread.

Some good suggestions here! I love beans once the weather turns cooler. Serious eats's vegan bean chili is excellent and makes a huge amount so you can freeze it for later. I love Indian bean dishes like chana, rajma , dal makhani but also the South Indian coconut-based curries. Heidi Swanson's website, Ottolenghi books have good bean recipes and Joe Yonan has a great book called Cool Beans with tons of good ideas.
