I also do egg roll in a bowl. I flavor it with oyster sauce and scallions.
When I have leftovers, I beat an egg or two, add a few tablespoons of gluten free flour to make a batter, add the leftover egg roll in a bowl, mix, and drop large dollops onto a greased pan to make cabbage pancakes. I serve it with sriracha mayonnaise and a bit of cilantro.

I’ve used it sometimes with chicken-apple sausage. Fry up the sausage, saute onions (optional) with them, then add cabbage and tart apple and saute them as well.

Yakisoba - my (non-Japanese) mother’s version, I suspect, was basically cabbage fried with bacon, mixed with noodles and flavored with soy sauce. There are more authentic recipes you can google, but I don’t have a specific one to recommend.

I saw this recipe for bierocks recently on Youtube and thought they looked good, but haven’t actually made them.

I love this, but I'm the only one in my family who will eat it. It "smells like farts" according to my kids and DH, and they'll eat cabbage in other forms like cabbage rolls or the Smitten Kitchen schmaltzy cabbage.

Simple roasted cabbage is delicious.

Cut small-ish cabbage wedges (a large head usually fills two half sheet pans). Add a chopped onion for a bit of extra flavor.

Drizzle with a generous amount of olive oil, sprinkle with salt, and roast at 450, stirring about every 10-15 minutes until tender/some pieces have browned.

If you have an instant pot, stewed cabbage takes 15 minutes to make. Kielbasa is a good addition.
