I would order a deep dish cheese pizza and ask them to slice in squares. Pick up from salad bar: marinated artichoke hearts, marinated olives, sundried tomatoes,marinated mushrooms- toss together as a salad to serve with pizza. |

I second the Boursin (or other cheese) and grab some nice crackers. Perhaps sliced salami, and maybe olives. I'd bring a nice small bowl, and a bamboo cutting board from home, and put that all on top.
You could buy pre-cut fruit and put 2-3 pieces on a skewer (this might take more than 10-15 mins though, depending on how many moms, and might be messy to make). But it would hold up well in the heat and the pool environment. Add this to the shrimp suggestion someone else had. You could also check in the international foods aisle--even if you're at a pretty basic grocery, you can sometimes find something a bit interesting. Another thought--if you're near an ethnic grocery store, you might some interesting ready made items. Thai grocery store near us has chicken satay ready to go, latino grocery store near us has empanadas or pan dulce. If you have a wegman's near you--that might be my first stop. They have great prepared appetizer trays. I think the "impressive" part of the snacks can come from presentation. Nice plate or platter from home. Good luck! |

If you want an upscale vibe, bring a nice platter and arrange a charcuterie tray with whatever appeals to you: spiced nuts, a couple good cheeses, smoked meats, plump blackberries, little jar of honey or jam, sliced cucumbers or cherry tomatoes, fancy crackers or baguette. It’ll be expensive but you can find pretty much all of that in the cheese section of your average Safeway.
Or pick up a platter from a Mediterranean place with fresh pita and hummus and other dips and add some cherry tomatoes and slice cucumbers and olives. |

Op asked for snacks to eat pool side, not something to serve during an upscale cocktail hour. Sge needs hardy food that don't easily spoil in the heat, food easy to eat, and nothing that requires too much prep work (Op sounds like she needs to grab & go from the grocery store). Watermelon, fruit bowl, Pico de gallo/chips, pasta salad from the deli, all come to mind w/o thought. |

Yeah, "impressive snacks" is cracking me up. Get some veggies and hummus or grapes and cheese or something. These fancy cocktail-party type spreads are overkill. |
Where I come from, mozzarella balls are not upscale. And Boursin isn't fancy cheese. And charcuterie is just another word for cold cuts. |

Agree! This is snacks at the pool. I’d bring a tub of hummus, pitas and bag of carrots and cucumbers. Watermelon would be great, too. |
