Baking sheet that won’t warp using broiler

What you need are jelly roll pans instead of cookie sheets. The jelly roll pans are thicker and have rolled edges so that they resist warping even at higher temps. Do not use any traditional cookie sheets, especially ones that are non-stick. Those are not designed to handle the high temps.

Um…when you cook at high heat with high edges and a deep pan like a broiler pan, the results are different than a flat sheet.


Please give me an example of something you would cook under a broiler at 550 degrees that would come out differently if you cooked it on completely flat pan with no edges versus a half inch deep pan. I’m curious.

This is OP. I have an Autistic child who will eat exactly 5 foods and this, last week, was the sixth. Everything has to be cooked a certain way. It’s actually good - I ate it too. So stop with your judgment until you walk in someone else’s shoes.

When I post and add that it's about my Autistic child people chime in about my parenting or ask what it has to do with my child, and when I omit that detail I just get people like that. Can't win on DCUM because there seem to be people lurking that just want to seize on opportunities to make people feel bad.

OP not what you asked but my picky autistic child loves food cooked in the air fryer, especially breaded cheesy chicken. If he or she likes crunchy or crispy things might be worth the investment.

The King Arthur sheet pans say they're only rated to 450 but I've put mine under the broiler plenty of times and they haven't warped yet.

Adding to the recommendation for nordic ware pans. I regularly use mine in the broiler and no problem with warping.
