What you need are jelly roll pans instead of cookie sheets. The jelly roll pans are thicker and have rolled edges so that they resist warping even at higher temps. Do not use any traditional cookie sheets, especially ones that are non-stick. Those are not designed to handle the high temps.

When I post and add that it's about my Autistic child people chime in about my parenting or ask what it has to do with my child, and when I omit that detail I just get people like that. | OP not what you asked but my picky autistic child loves food cooked in the air fryer, especially breaded cheesy chicken. If he or she likes crunchy or crispy things might be worth the investment. |
