Sharing our new favorite salad

I did them separately, because in my experience the sweet potatoes are better with a little extra time. I think I did things at 400 convect for about 30 minutes, maybe 35 for the sweet potatoes. Olive oil, salt & pepper and often some Old Bay because my kids are fans.

But since I was clearly winging this, I found the recipe I based this off of, and they give much better instructions than I do:

You definitely want to include the apple, because in our opinion, it's what makes it so good.

And thanks to the PP who reminded me about Greek salad. Will be doing that this weekend!

Sounds good op. Now I’ll share our family’s current favorite.
Baby arugula
Super sweet cherry tomatoes (Wegmans) quartered and sprinkled with salt and pepper
Fresh mozzarella crumbled
Olive oil
Balsamic glaze (Costco)
Season with more salt and good black pepper. I’ve made this with mixed greens too, but it’s really better with arugula in my opinion.

You should try the Trader Joes kale chicken caesar salad people!!! It's good.

Oooh, I’ll have to do this one, too. Arugula is my favorite.

Kale can be tough/fibrous. Rubbing the dressing into it softens the leaves and makes raw kale more tender for salads.

Thanks for the tip! I have a big bunch of lacinato from the farm market and I'm doing this over the weekend!!

Hmmm. I don’t know about raisins and apples in salad. I’d probably leave those out, otherwise sounds good!

I massage the kale for kale chips too. I never believed it mattered so I just tossed it but it always came out uneven and was annoying to cook. Then one time I massaged it - really rubbed in the oil, fully coating it and they came out absolutely perfect.

My fav lacinato kale salad is this one-

Massaged kale
Blue cheese crumbles or sharp cheddar tiny cubes
Apple cubes
Toasted salted seeds (sunflower/pumpkin)
Walnuts, toasted and chopped
Minced tiny bit of onion (soak in cold water)
Apple cider vinegar
Olive oil
Salt/pepper
