I suppose that's why there's no set date for Easter like there is for Christmas and the feast of the assumption, etc, but what does all that astronomical stuff have to do with something religious, like Easter?

It didn't originally, it was a pagan spring celebration, hence it being tied to the equinox.

Yep, nothing really. The eggs and bunnies have some vague relation to the ideas of rebirth, spring, and resurrection. And egg hunts give little kids a way to share in the celebrations. But none of this is part of scripture or liturgy.

The pagan roots of those traditions all pre-date Christianity. Just like the Yule log, etc.
