I have three standard salads I make—any of them go on spinach and/or arugula:
Fall harvest: Pecans or walnuts Chopped apple or pear Dried apple chips if you have them Chopped hard boiled egg Cubed sharp cheddar Homemade Dijon honey vinaigrette (use olive oil and rice vinegar) Asian inspired: Sliced almonds Mandarin orange Cubed tofu Scallion Edamame Honey rice wine vinaigrette with a chili soice of choice Mexican inspired: Corn Black beans Avocado Cubed tofu Pecans Chopped grape tomatos Chopped cheddar Jicama if you have it Green goddess salad dressing |

We love Italian chopped salad - iceberg and romaine, chopped fresh mozzarella, salami and prosciutto, cherry tomatoes, pickled onions, basil and homemade Italian vinegrette (oil, red wine vinegar, oregano, sugar, salt, lemon)
Sometimes add chicken breast and serve with garlic bread |

I love Asian salads. I'd try all of the following:
Larb Pomelo salad Burmese tea leaf salad Crying tiger salad Tofu skin salad Gado gado May be stretching it a bit to call chaat salad, but there are more salad-y versions you could try, like chickpeas, tomatoes, cucumbers, onions topped with the usual sweet & hot green chutneys and all the fried crunchy bits. |

Greek salad:
Romaine, tomato, red onion, olives, cucumber, feta, hummus, chicken, falafel with a Greek vinaigrette. Chef salad: Lettuce, tomato, cucumber, bell pepper, turkey, salami, provolone, hard boiled eggs Italian theme: Arugula, tomato, roasted red peppers, fresh mozzarella balls or shaved Parmesan, fresh basil, chicken, salmon with balsamic vinaigrette |

| I do better salads for lunes but I have picky kids so my dinner salads are not polarizing at all. I do taco salad, chicken fajita salad, chicken Cesar using chicken nuggets/strips, and Italian chopped salad with added beans. These all pass the picky kid test. |
