Stroganoff is a great way to hide veggies. We add 1 zucchini, grated (about 1 cup grated) into the sauce.

With Swedish meatballs (try the Serious Eats recipe -- I love Daniel Gritzer) instead of boiled potatoes

Brown butter with noodles, feta and asparagus.

Noodles with butter and cabbage.

Coq au vin (or any stew).

Chopped meat with onions and mushrooms, and some cream sauce over noodles.

Easy chicken divan (chicken, cream of chicken soup mixed with mayo and lemon juice, broccoli, and cheddar cheese topped with crumbled chips). That latter, over noodles, is divine.

People still use canned cream of mushroom soup in recipes? Yuck, it isn't 1980.

This “grown-up” tuna noodle casserole is the bomb: https://www.thekitchn.com/recipe-grown-up-tuna-noodle-casserole-recipes-from-the-kitchn-182849

You could also do bastardized kasespaetzle: saute 1-2 onions until brown, toss with boiled noodles and 1-2 cups of the shredded cheese of your choice. Chopped bacon optional. Bake at 350 until warmed through.

Anonymous wrote:Butter noodles - just top with lots of butter, better than bullion chicken, parsley (dried or fresh), and Parmesan… so good!

This is a staple side dish in our house, so we have no problem blowing through endless packages. I cook them in chicken broth, lots of butter and parm with a splash of the cooking water. Salt/pepper/garlic powder. DELISH. This is my "I am alone for the night" go-to meal, even though it makes me feel 5 years old.
