This is what I learned when I got my food Manager's safety license.
The danger in those picnic salads is in the vegetables, usually. It is not the mayo as that stuff is full of preservatives/oil. So potato salad for example is one of the most dangerous. I also learned that tuna salad at room temperature can sit on a buffet safely up to 6 hours. |
