Re: the suggestion about hash--I tried making a sweet potato hash once but unlike actual potatoes they don't really keep their shape.

Add them to some ground turkey to make turkey sweet potato meatballs. So delicious!

Sweet potato, some stock of your choice (chicken or veggie). Simmer with garlic, ginger, salt, turmeric, and a few generous tablespoons of peanut butter. Blend the entire thing with an immersion blender for a delicious sweet potato peanut soup.
