Tried to make sweet potato wedges in the oven. They never crisped and instead just got mushy. From googling after the fact, I think I put in too many and they released a lot of steam. Ugh.
Ideas of what I can do with them now?? Like, throw them into other dishes or turn this into something else? Hate to throw them away but they are just not any fun to eat as is. Would love any ideas! |
Mash them up and eat with chili or seasoned black beans
Chop them up and make sweet potato hash.
Shepherds pie with sweet potatoes i
Sweet potato soup
Put them in a hot pan (on the stove) with a little oil. They will crisp up - then season however you like.
If they are not seasoned, you could make sweet potato pie. If they are, blend them into a soup. Or make a Shepard’s pie.
