OP, I did this and basically just swapped my usual simple carb to any bland veggie that can go well with a dish, like brocolli, frozen mixed veg, zucchini, cauli rice. Sometimes I do a side of complex carb like barley. Tofu is also a good side because it doesn't have any taste and complements anything that have sauce. My veg intake increased using this method. I've also recentluly discovered tofu noodles and shirataki noodles which are low carb, tastes different and texture is different though, but good enough when I'm on diet days and want the carb low.

Cauliflower fried rice (you can buy all the vegetables in a bag ready to go)
Spinach with toasted pine nuts and garlic
Broccoli with cheese sauce

Asparagus roasted with garlic and olive oil, Parmesan sprinkled after
Spinach, garlic, olive oil
Grilled romaine lettuce hearts, dress with Caesar and Parmesan
Zoodles
Zucchini pan fried in olive oil

Stir fry with favorite sauce any of the following bok chop, mushrooms, red, green, yellow peppers, broccoli, cauliflower, zucchini etc
You can take almost any dish and just do vegetables, serve it as a side rather than a main course. We like green peppers, and bamboo shoots in a Thai green curry sauce or Kung pao sauce with cauliflower.

Bok choy or spinach sautéed with garlic, sesame oil and ginger

Loaded cauliflower- roast in an ovenproof dish -onion, cauliflower, garlic, cream, cheddar cheese, salt, pepper
For pot roast, in the last hour of cooking throw in a bunch of mushrooms and carrots

I made mashed cauliflower (in place of potatoes last night). My family said I should sell it, it was so good. Here's the recipe:

1 head cauliflower steamed for 15-20 minutes.
Put in food processor and add 1 Tbl each sour cream, cream cheese and butter. Puree and add salt and pepper.
