I’m not OP but I’m going to try this. I’m the PP that suggested vegetarian tacos

Steamed Vegetables (broccoli, green beans)
Rice
Sauteed cubed boneless chicken breast
Trader Joe's green curry sauce

Cook them separately and heat the sauce. DH can eat veggies and chicken with sauce, DD can leave out the chicken.

White bean soup with spinach
Cook bacon on the side and use as topping.

Pasta sauce with meatballs on the side, add the spaghetti squash or zucchini for the no carb person. This is what I do in my home.

Salmon topped with lemon zest, salt, pepper and a touch of brown sugar. Roast in 400 oven until just cooked.

Steam veggie on the side.

Rolls from the store.

Mediterranean bowls (quinoa, falafel, dolmas, hummus, feta etc.)
Burrito bowls (rice, beans, guac, sour cream, salsa, etc)
Pasta/broccoli/sauce/cheese casserole

rice, steamed broccoli and curry sauce is not enough protein for a growing vegetarian child.

Sounds like her DH won't eat that. I don't have the answer but I'm in a similar situation with a picky DH. I just started cooking for me and the kids and letting DH eat what we do or eat cereal.

12yo doesn’t eat any meat or fish
I cannot have soy so fake meats are out
I typically try to do 1-2 vegetarian meals for us all and then have something dd can eat alongside the side dishes of meals with meat.


For vegetarian friendly meals - what about adding subbing in

instead of rice, quinoa (or half quinoa/half rice)
instead of pasta, chickpea pasta

You get the idea... Just adding in more protein where possible. Rice/quinoa and pasta are go tos because you can add whatever you want on top.

1. Can of Canellini beans, can of diced tomatoes, garlic, chopped onion, olive oil, salt and pepper. Sautée onions, garlic and olive oil. Add the rest and simmer for 10-15 min.
Serve over pasta with parmesan cheese
Side salad or steamed broccoli.

2. Black bean and sweet potato tacos or quesadillas

The DH doesn't have to eat it. I mean to add a bit more protein for the vegetarian and for the carbeaters.

What's the low carb person going to eat? Salad and steamed broccoli?

When I make it I actually use sunbutter because of an allergy but I don't find it too strong.
