We have leftover chicken chili and leftover chicken cutlets that my husband and I are planning to eat - and I'll offer to the kids. Then, I am going to make this for any kids who wants it:

I call it shake n bake, but it's nothing like the stuff you buy in the store. Is a one pot meal
Slice sausage (I like apple chicken sausage, but kielbasa or something smoky or spicy - any sausage would work), and put it in a 9x13x2 (lasagna) pan that you're sprayed with Pam. Put in a 350 oven. While it's in the oven , dice sweet potato or butternut squash (really dice, not large chunks or it won't cook). Assuming about 10 minutes the sausage has been in the oven, take the pan out, give it a little shake, and add the diced sweet potato or squash. If the sausage you used isn't real fatty, you might want to give another spray woth Pam or olive oil. Sprinkle with Thyme (or whatever your family likes) and put it back in the oven. In about 10 minutes, add raw green beans (same thing, pull it out of the oven and shake and then add the green beans and return to the oven). In about 10 minutes, add peeled, diced apple pieces. Now, after about 40 minutes total, eat! Great colors (brown, orange, green, white) so it looks pretty, and tastes great. |
How old are your kids? |
| I'm making my MIL's goulash. It takes too many pots & pans, but the kids swear they'll clean up. It's ground beef browned with onions, garlic, peppers, spaghetti, cans of tomato & mushroom soup mixed with shredded cheddar cheese. Put into a casserole dish and bake. Not healthy at all, but everyone eats it. |
| I'm doing breaded baked tofu, couscous, and brocolli. |
NP. I can see where you’re trying to go with this, but the OP never mentioned kids either. |
| Just peeled some shrimp that I defrosted and making alfredo sauce with pasta and broccoli. It's a good way to use up a little cream leftover from the holidays. |

OP, how is the cheesy black bean bake?
|
| I have had pot roast going in the crockpot all day. Smells so good and cozy. |
| I am making broiled Caesar salads with crispy chickpeas. |
| Beef stew in my slow cooker tonight! Looking forward to leftovers for lunch tomorrow too |
| Loaded baked potatoe |
Yes, Mississippi roast. Throw in baby potatoes and carrots towards the end and it’s dinner with 5 whole minutes of effort. It’s what I cook when I don’t feel like cooking. |
