Wait, you stick supermarket packaged meat directly in the freezer without repackaging? How do you thaw it? Doesn’t the gel packet thing burst? I ruined a pack of chicken thighs that way.

Costco oxtail is pretty good and i think 9.99 last i checked (a couple weeks ago)... you don't want too much visible fat on it when you buy it.

If you're making the Serious Eats recipe I don't really find the wine sauce necessary and that's what the oxtails are for. We're all happy with a horseradish sauce. I made both one year but haven't since.

Costco (DC) was up to $15/lb last year but it's been $7.99/lb the last three months. Granted, that's still insane vs when it was $.99/lb when I was a kid and we bought it because we were poor, but when white people find out about a cut of meat the jig is up.

I don't think it is all that expensive. I mean, the cow only has one tail.

There was just article in the nytimes about expensive oxtail. It's like hamachi collar but to a much greater extent. Each cow only has one tail, but can yield much more ternderloin and other cuts.
