I prep a salad bar at the beginning of the week and keep it in my fridge crisper -- little containers with chopped veggies, croutons, crispy onions, crumbled cheese, dried cranberries, nuts. Plus a box of leaf lettuce. Take it all out and salad is a breeze.

Spring mix, oranges (like cuties), sugar snap peas, garbanzo beans. No chopping, minimal peeling.
With sesame or carrot ginger or miso dressing. |

| Lettuce mix, shredded carrots, toasted sunflower seeds that I do in a pan w/olive oil, salt+pepper, and a little sugar. Sometimes add chickpeas. Yum. |
