Pizza omelets. Mushroom, peppers, onions, cheese, and your choice of meat - pepperoni/ham/whatever. Heat up the sauce a bit to throw on the omelet.

Add it to a vegetable soup in lieu of a can of tomatoes. Did that night and it was delicious.

Poach eggs in the sauce and add feta cheese and spinach.

I like it with chickpeas and yellow curry spices. I'd add a small can of diced tomatoes and a diced onion.

Quick and easy Calzone.

Get some Italian sausage, cut into disks. Get some small meatballs. Heat the meatballs and sausage in the sauce, then get a pre-made pie crust. Put the meatballs and sausage and sauce onto the pie crust (optional, add some shredded mozzarella cheeses) and fold over and crimp with a fork. Put in a couple of vent slots, bake according the the pie crust instructions.

Bake some of the breaded eggplant slices from Trader Joe’s and top them with the sauce and mozzarella.
