I've done the same with roasted brussel sprouts. They travel well.
I hate broccoli salad so I would vote not that. A green salad might be nice. Maybe put some Thanksgiving stuff in it like candied pecans, little chunks of roasted butternut squash, some shredded brussel sprouts. You can put the dressing on and toss it right before dinner. |

Roasted brussels sprouts won't be BAD after 30 minutes of travel, but they certainly won't be crispy, so what's even the point?
Better to do something that will end up in the same state it's supposed to. Collard/mustard greens with bacon, creamed spinach, or even just a salad as others have suggested. |

Sorry that is...not to my taste. I wouldn't say that has universal appeal. I enjoy a green salad on Thanksgiving. Something simple just good quality vegetables and a couple of choices of dressing. |

Anything in an instant pot or a locking slow cooker made for travel.
I’ve made Mashed potatoes in the instant pot. They can travel in the pot and reheat in the pot. Very easy. Pick what you want to make and google for an instant pot recipe. Some dishes are better in a slow cooker. It is totally worth investing in a travel slow cooker to get a locking lid and/or an instant pot. |
OMG! This is what I call it. I never make it because cream of mushroom soup makes me want to gag. But Alton Brown has a recipe I might give a try this year as a guest really likes this dish. |

Then I make two pies, a rum cake, and whipped cream. |
