s/o Thanksgiving sides that travel well

Anonymous
So I need to provide a green vegetable side and a potato side for a family Thanksgiving dinner this year. I have never done this before. It only needs to travel 30 min, but I will only be able reheat there, not cook. Please give me your foolproof/crowd-pleaser/favorite dishes!

I've made the Cook's Illustrated Make-Ahead Mashed Potatoes recipe before, and it reheats well. But I think you could bring any potato dish (mashed or scalloped) and they'd do fine being reheated after a 30 minute drive.

A spinach gratin or roasted brussels sprouts would also reheat well.

White trash green bean casserole should reheat pretty well.

Roasted Brussels sprouts with pancetta and balsamic glaze

Make-ahead mashed potatoes (Pioneer Woman also has a recipe), or just do scalloped potatoes (Ina Garten recipe)

I always reheat my mashed potatoes in a casserole -- they're so much fluffier that way.

+ 1 for the suggestion of roasted Brussel sprouts. Those can be served closer to room temp.

Isn't there a grocery store nearby your destination you can go to and pick up some bags of salad, veggie tray, or the like?

You can even opt for pre-ordering a hot dish. Wegmans has a great selection of side dishes in-store or available for pick-up/pre-ordering.
Like a scallop potato, green bean w/almonds, ...the possibilities are endless.

Does it have to be a hot vegetable dish? I adore this broccoli salad recipe (it’s kinda like a slaw) and it’s served cold or room temp so you wouldn’t have to bother with reheating. It provides a nice crunch, which many Thanksgiving spreads are lacking!

Broccoli salad is served cold, just put an ice pack under the bowl

Roasted beets, walnuts and goat cheese would be fine room temperature

Baked beans or corn casserole travel well. A scalloped potato dish would retain heat better than pan-roasted, I use an insulated casserole dish with a hot insert and everything stays hot.

30 minutes isn't very far, it would take longer to stop at the grocery near their house.

Put the potatoes in a crock pot so they don't need oven space. Can you parboil green beans at home and then do a quick sauté on the stove top so they cook in just a few minutes?

It’s 30 minutes, they don’t have to hit a grocery store em route

These are good ideas.

In 30 minutes, if you keep them in the dish that you cooked them in, wrap in a towel, and store in a cooler, they likely will just stay hot enough to serve.

Of course I realize you may not be eating immediately upon arrival.
