I'm looking to expand my slow cooker menu options -- I work at home, with small children in pre-school, so the slow cooker works very well for me because I can prepare dinner without kids underfoot. Please share any simple recipes you know off the top of your head. The simpler the better. Thanks!

Shredded chicken for pulled chicken sandwiches.
Put chicken breasts (as many as you like or or will fit nicely) in cooker for a couple hours on high. When they seem close to done, shred chicken with a fork and add in a packet of taco seasonings with 1 cup of water. Let cook for another one to two hours. Serve as sandwiches with salsa or with potatoes or over rice. Add a side of veggies. |

1. jar of salsa + can of diced tomatoes + frozen chicken breasts. (when done, serve with cheese, beans, rice, lettuce... you could also add beans/rice midway through)
2. bbq sauce + pork shoulder + some liquid (water or chicken stock) ... turns into pulled pork. 3. chili... combo of ground meat, canned/rehydrated dried beans, can of diced tomatoes, boullion cube, diced onion, diced bell pepper, chili powder and spices of your choice |

At the moment I have three chicken breasts on low (they were thawed) with a packet of taco seasoning on the bottom of the cooker with a container of pico, 1/4 c olive oil and 1/4 c water on top. Cook 4-6 hrs. Shred with fork. Cook 30 min. Ta-da, taco night.
I am looking for a good pulled pork recipe... I saw the one above - would one typically use pork shoulder or would 2 tenderloins suffice? How much liquid do you normally put in... enough to cover meat or less? |

Slow cooker cranberry turkey breast. 4 ingredients: 1 can cranberry sauce, 1 package dry onion soup mix, 1/2 cup orange juice and a 3 pound boneless turkey breast. Mash the cranberry sauce, then mix with the onion soup mix and the orange juice. Throw the turkey into the cooker and pour this mix on top, and cook on low for 7 hours.

Beef roast + ginger + jarred hoisin sauce = touch of water = asian tacos! when you add some tortilla and shredded carrots/cucmber/onions
1lb beans + 1 large can diced tomatos + 1 box chicken stock + carrots and onions + lots of Italian Seasoning = healthy lowcal lowfat bean soup |
| Beef stew: Package of beef cut into cubes (Safeway sells it, very lean) + one package of beef stew seasoning + chopped carrots, celery, potatoes, onion and cover with water -- cook for 4-6 hours and it's done. Very delicious. I usually serve it over white rice or egg noodles. |
You can also get frozen stew vegetables. |

Carnitas ... big hunk of cheap pork shoulder or butt cut into cubes. Tossed with 3T oregano, 1T salt and pepper each. Place in slow cooker and top with a sliced onion. After cooking all day shred and serve with tortillas and salsa.
Peanut pork ... pork tenderloin topped with peanutbutter, soy, ginger and garlic. Sooooo good in lettuce wraps. |

3 to 4 skinless, boneless chicken breasts
16 oz jar of salsa 15 oz can of corn 15 oz can of black beans garlic powder a few good shakes 1 chipotle cook on low all day, or high 4 to 5 hours, add 4 oz of cream cheese. serve w/corn bread or on rice, and salad |
I do this as well....It's a fantastic recipe, but I added a few things to get more veggies in it. I saute some diced onion and green pepper and add to the mix. Also I add a box of frozen spinach. And I give a few shakes of chili powder. Fantastic with pepper jack cheese sprinkled on top. |
Don't you want to cook the pork shoulder first and then skim the fat off? I can't believe how much fat there is in some meat. I cook meat, chill, scrape off fat, then put back in crock with other ingredients and flavorings. |

Chicken stew: 2 bags frozen stew vegetables, 3 chicken breasts, bay leaves.
Chicken tangy: 3 cx breasts, bag frzn brussel sprouts, handful prunes, mustard, bag cauliflower sweet potatoes chopped, 2 cans diced tomatoes, 2 cans black beans I don't chop things or pre-cook (except for chili: DH is a huge fan) as I'm throwing things in at 5:30 AM to leave the house by 6, after showing and making lunches. |

1 ppound bag of red kidney beans, rinsed well
Cover with water one onion, sliced into quarters 1T salt 2t ground cumin 2t ground black pepper 1 cut up jalepeno pepper, without the seeds. Cook in crockpot on high for 8 hours. mix with immersion blender to make non-fried refried beans or just serve as is over rice or in a taco shell |
