new dinner ideas for teens/kids who eat a lot

What is your recent favorite dinner for teens/kids who like a substantial dinner, for example with meat/grain/veggie/salad. They will make or help make the food but we are out of ideas.

Also always running out of ideas.

Tonight, we're having a homemade twist on Chipotle. I bake or grill a whole baking pan of chicken thighs with taco seasoning, either from an envelope or my own made-up version.

Cook a pot of rice.

Roast a container of cherry tomatoes, cook some frozen fire-roasted corn, slice avocado and lime, serve.

This usually leaves at least a little chicken for the next day, when it can be used on a salad or in quesadillas. It's hard to have leftovers with the big eaters, though.

Big salads (light on the dressing of course). Load it up with hearty veggies like cauliflower, tomatoes, broccoli.

NYT chicken shawarma with sheet pan vegetables, raw cucumbers, rice and tzatziki sauce. This is a huge hit with my kids and they're always begging for it. It is a lot of work, but I generally get two nights of meals out of it.

That’s not very substantial. Hopefully you load it up with protein, too.

Teriyaki marinated chicken thighs, either grilled or broiled. Serve with rice or sesame noodles, and steamed broccoli.

Meatloaf. Not kidding, my teens love it. We have it with roasted or mashed potato, some kind of green veggie, and salad.

Any kind of pasta dish. Carbonara, shrimp scampi with angel hair, Alfredo with grilled chicken, bowtie pasta with sausage and peppers, you name it. Big salad on the side.

A protein, carb, veg, and salad is not a substantial dinner. It's a normal dinner. One thing I do is put lentils in salads, meat sauce, etc., and serve kasha varnishka as a carb sometimes.

When I want a break by having a lot of leftovers I'll make up a big pot of goulash/american chop suey with extra vegetables (sweet bell pepper, caramelize onion, spinach, broccoli bits, etc.) and turkey sausage. Sometimes add ricotta so it's more like a ziti dish too. Another good idea is dumping in a container of drained mozzarella balls - ciliegine or perline

i gave up on interesting cooking and now follow some of those "costco dinner recipe" instagram accounts. The quantity of food purchased and consumed here has worn me out.

I was thinking about making some pulled chicken sandwiches. You could do coleslaw, salad, corn, beans or potatoes to bulk it up.

Summer dinners:
Grill burgers, bratwursts, salmon, wings, shrimp, steaks and salad and bread or potatoes. My kids don’t mind leftovers of grilled meats.

Chicken souvlaki with Tzatziki, naan, rice and Greek salad.

Sheet pan chicken fajitas with yellow rice and pinto beans

Teriyaki chicken thighs, rice and broccoli

For winter, I have other dinners on rotation.

Big salads loaded with veggies. I always add avocado and chicken for protein.

Chipotle type bowls. I start with rice and add black beans, chicken, avocado, cheese, jalapeños, lettuce, etc.

I just take a recipe and double it. Tonight I am making Chicken and broccoli in white sauce and doubled the sauces and the amount of chicken and broccoli. Serve it with rice.

On sundays we grill a ton of meat so we have leftovers for a week. I like to make big pots of beans, pasta salads that I can add some of the meat to. Like PP we make a lot of quesadillas (which can be a side added to a regular dinner) Also rice bowls with tofu, vegetables, dumplings
