What's for lunch?

I feel like we often share dinner ideas, but I get stuck on lunch sometimes, so I'm looking for inspiration. I also think people tend to eat weirder stuff for lunch, so it might just be interesting.

Today I made a chickpea salad with random leftover veggies - cherry tomatoes, cilantro, spring onions, snack peppers - and a homemade dressing of olive oil, dijon, garlic, salt, pepper. And I had a hunk of goat cheese with some crackers.

a slice of sourdough topped with nutella and strawberries and two hard boiled eggs.

Today, a hard boiled egg and the strawberries that are beginning to shrivel. Might have a handful of pretzels later.

On days my partner are I are both home, we sometimes treat ourselves to a frozen pizza.

Otherwise, usually leftovers.

Usually it’s leftovers, or a plate of green beans, or salad (lettuce, pepper, carrot, cucumber, radish). Sometimes chickpea tu-no salad sandwich or muhamarra (beets, walnuts, pomegranate syrup)+ crackers.

3 small pieces of leftover Pizza Paradiso pizza, two cans of LaCroix.

Chicken Sammich.

Cream of chicken soup (the canned stuff) with Asiago cheese crackers, and some Campari tomatoes with salt. (Before anyone comes for me I have very low blood pressure.)

I think I want to do this for dinner. I always forget about it as an option because the frozen pizza is in my extra freezer.

I had Cava.

Spinach, rice, red pepper hummus, tzatziki, roasted veg, broccoli, corn, tomato/cucumber, pickles, date vinagirette, and skhug. Portion was skimpy so I finished the bowl which is unusual. So good.
