What's for lunch?

My lunches are weird because I skip breakfast. So maybe some cottage cheese and rummaging of vegetables from the fridge and some triscuits. Then I need that "sweet" (I hate this habit/craving) so maybe a teaspoon of peanut butter.

I was at the office so went to a restaurant and got takeout - grilled chicken, romaine salad, fingerling potatoes, and a liter of water.

I tend to rotate through the same few things:

Avocado toast (easy enough to make at the office if you take in some English muffins or whatever your choice of toastable carb is, a ripe avocado, feta and a seasoning blend)

One of the Asian style bagged salad kits, supplanted with frozen dumplings.

A different frozen salad kit supplemented with some rotisserie chicken.

A homemade chicken salad (I have several recipes I rotate between) using a rotisserie chicken.

A homemade tuna salad.

And leftovers.

I would say that probably ~45 weeks of the year I am having one of, or some combination of these for lunch.

Chinese chicken salad - mixed cabbage/julienne carrots, shredded chicken, cashews, cilantro.

Hard boiled egg on toast with avocado always gets me through the afternoon.

Two Biscoff cookies.

I’m stressed about a situation this week and cannot get it together enough to eat three solid meals. Fortunately dinner is going to be delicious and healthy.
