| Looking for ideas for quick lunches at home when I don’t have leftovers. I am sick of turkey sandwiches but those have been my go-to. I need to be able to prepare it in 15 min or less (I can do some up-front work on the weeknds if that helps, but ideally I can just prep and eat the lunches quickly). Thanks! |
| Yogurt. |
| Lentil soup with frozen spinach added. Can add a piece of toast if you want. |
| Frozen rice in the microwave with a bag/can of heatable chana masala (stewed chickpeas). |
| I make something like a batch of tofu or bean burrito mixture to keep for the week and then I put it into a wrap and air fry for 5 minutes. |
This is what leftovers are for, isn't it? |
This, Greek yogurt with fruit and pantry staple toppings. I always have granola, chia seeds, and almonds on hand. I'll usually have with blueberries or raspberries, and I often keep bags of frozen blueberries around just in case I don't have fresh. Also do a quick salad sometimes with spinach, a hard boiled egged, goat cheese, walnuts, dried cranberries, and dressing. The egg is the only thing that takes time to prepare and it's really easy. Sometimes at the beginning of the week I make a rash of bacon, chop it up, and store it in the fridge -- easy item to sprinkle over greens with some fruit or veg, some cheese, and dressing, to make a salad more filling. Another super easy one: avocado toast with a fried egg on top. Add some chili crisp if you like spice. |
| Omelet |
| I buy a tub of chicken salad and one of tuna or egg salad from the Italian store each week. Eat on bed of lettuce with some fruit. |

It would be better on toast. |
We dont do those salads but we do the same with a Rotiseree chicken or pre-made chicken/salmon from Whole Foods. |
| I will make eggs (fried, scrambled with cheese, spinach- whatever I have) and avocado toast. Easy, quick and filling! |
| Scrambled eggs (I like to saute a bit of spinach and mushrooms first or can use whatever veg you have on hand) and toast. |
|
Cheese/crackers fruit.
Buy soup from Costco and keep for when you need a quick lunch |
