Jiffy cornbread with cake mix recipe

Anonymous
I want to make a cornbread using jiffy cornbread mix and a boxed vanilla cake mix (I know, I know, but it is the Superbowl and we are serving chili). Every website has a slightly different version and variations on using 1 or 2 boxes of jiffy, how many eggs, and whether to use milk, butter, oil, or water (or some varying combination) and what oven temperature to use. Anyone have a recipe they can recommend? TIA.

Did you know that isn't vegetarian? It contains Lard. Learned that the hard way....

The cake mix thing is new to me. I just love the Jiffy mix as is.

Oh, is thus how Whole Foods makes their yummy cornbread?? Do tell!

But Jiffy has a vegetarian version!

I assume it is for people who want a finer grain and sweeter cornbread. Ugh. It was bad enough getting that sweet "Yankee" corn bread in Massachusetts. That style uses equal parts flour and cornmeal and significant sweetener.

But if you must I googled the fake mix recipe

Make it with creamed corn. In Florida people did that. But never cake mix

I am in the 'leave it alone' camp. I would bet that the cake mix will overpower the corn flavor and it's going to taste like vanilla cake with a slightly weird texture. If you really want sweet cornbread, add some sugar or honey to the jiffy mix. There's no good reason to make a cornbread/cake hybrid.

Go buy a box of Krusteez honey cornbread. It is my family's favorite (but not me, I'm southern and like cornbread not sweet).

This sounds awful. Why would anyone mix cornbread with boxed vanilla cake mix???

Jiffy's cornbread is the default cornbread I expect. I would be grossed out if someone made it more like cake. Are you going to frost it?

Fritos are better with chili no matter what you do with cornbread.

It's actually pretty good. Don't criticize before trying.

The instructions are on the box and it’s good. Don’t mix it with cake mix.

I am a Jiffy purist 😄

Is this how Hard Times made its cornbread? Wow that stuff was sweet (and I have a sweet tooth, but biting into the Hard Times stuff was quite a surprise)

I would definitely use whatever recipe has the highest proportion of cornbread mix
