What are you meal prepping this weekend?

What are you meal prepping this weekend? I need some inspiration and motivation.

I'm feeling very lazy and have accomplished little today and am trying to get it together to at least look in my fridge/pantry and figure out some things I can meal prep for the coming week. I want to make a NYT chili recipe, but don't know if I have the energy for it -- it's just chili, but it's one of those looooong ingredient list recipe situations. Definitely on the list are:

*Morning Glory Muffins (Sally's Baking Addiction recipe -- if I get the energy to make them tonight I'll do it with a mashed banana and pineapple juice, if I wait until tomorrow I'll get applesauce and orange juice at the store).

*Tuna Salad

*Caramelized onion and goat cheese tart

I’ll be making spaghetti squash boats with beef.

I am the most basic bit** cook in the world. Tonight's dinner will be baked black cod with a side of leftover Mac & cheese and raw carrots. Sunday will be pasta with leftover baked shredded chicken in tomato sauce with a side of raw carrots. We are skipping Monday due to Issues. Tuesday I will make baked chicken and new potatoes with ... yep, more raw carrots. Wednesday will be shrimp with pasta, carrots.

Nothing I make is impressive or inspiring. That's the beauty of it all. Or whatever.

This sounds good. I love spaghetti squash but forget about it.

Lasagna. Then I'll eat it all week.

And I have a couple of acorn squashes I meant to use for something weeks ago, and I didn't -- so I'm going to make a quick squash soup.

Making a large pot of ham and bean soup tomorrow that we will eat for dinner with crusty bread, then spouse and I will take for lunch all week. The rest will be figured out each evening

I'm marinating and freezing chicken thighs. Portioning out ground beef and either making patties or meatballs.

Turning lots of apples into applesauce.

Using some leftover ham to make a casserole. Will crunch up some potato chips I need to use up for the top.

I made baked ziti with sausage and meatballs yesterday. Enough for tonight's dinner.

I froze my turkey stock from Thanksgiving so am making barley vegetable soup today.

DD gave me a list of what she wants me to make this month--so next up is a red Thai curry with salmon and shrimp. I just make the sauce and add the salmon and shrimp to cook before serving, so I can reheat the sauce any day and add the seafood.

NYT pesto chicken meatballs. Double batch so they last all week. Bought the pesto from Costco yesterday.

I don't meal prep. I cook on the weekends, and it lasts most of the week.
