Anyone have a particularly good one in the DMV? I know it’s a pretty basic dish, but not everyone serves it. Pretty bummed they don’t have it at Filomena!

No, I think it’s a pretty common and standard Roman dish…but it’s less popular among Italian American families in the US.

I'd also recommend just making it at home. I've found some places add cream to it, which isn't the correct way of making it. It's easy to make at home and is just 3 ingredients (pepper, pecorino Romana, and pasta (reserving pasta water to emulsify the cheese)). Best to eat it right away.

I've tried several times to make this at home, and always end up with clumpy, sticky cheese. How do I make it smooth???

Really good versions at Roses Luxury and Centrolina. It’s so simple, but I also have not had luck at home. Alfredo sauce on the other hand is a breeze and I can’t believe I have paid for that in the past.
