What should I bake this weekend?

Back at work after furlough (yay!) but was getting more into baking. What should I make this weekend? Time is limited to early morning Saturday and Sunday afternoon, so it's not a good weekend for sourdough. I'm also making coq au vin Sunday.

I just made a chocolate chip cookie pie/skillet. Tomorrow I will make blueberry muffins.

I am making linzer cookies— just the cookies, not going to fill/assemble them — to freeze for the holidays. If I get enough other stuff done I will also make some shortbread cutouts and also freeze for later icing.
Someone at work mentioned chocolate mint cookies and now I want to make those, too.

Ah, I was thinking about the NYTimes "everything" cookie skillet! I don't know if i have enough good salty add ins though. I'll check Sally's for other ideas.

I'm making my Thanksgiving rolls with the bake ahead recipe from King Arthur flour. If there's still room in the freezer I'll do walnut cookie dough for Christmas.

I had no idea such a thing existed. I was thinking about doing their freeze and bake rolls, but that one only has one rise, and I wasn't happy with that idea, so thank you!!!
