A few years ago I asked the community for their chili recipes. I made a handful, the family voted and we now have the best chili (of all time!) Now I'm on the search for a really good chicken chili recipe. Beans are okay! If you're willing, will you please share your favorite chicken chili recipe?

I add half of the beans with some stock and make a slurry and keep the other half whole and add to the pot or keep the beans whole and do a roux depending on timing. Its really good with coconut milk but Ive used dairy as well and its been a negligible difference. I also adapt to our needs by using 2lbs chicken plus I add zucchini and another bell pepper. Due to the additional items, towards the end I may add some more broth. |
