Help me make chicken soup.

I have this ingredients
Chicken drumsticks with skin on.
Noodles
Carrots
Celery
Onions
Poultry blend herbs( rosemary,sage and thyme)
No salt seasoning
Italian seasoning

Sear the chicken in your soup pot in olive oil. Add chopped celery, onions, and carrots and saute until fragrant. Stir in your poultry blend herbs. Cover with water, bring to a boil and the simmer until the chicken is tender, probably 30 to 45 mins or so. Remove the chicken, and shred the meat, then add it back to the pot along with the noodles. Simmer until the noodles are done, about 6 or 7 minutes, and season with your no salt seasoning to taste (I assume you are using this because you can't have salt -- if you can have salt, you will definitely want to add salt and pepper to taste at this point).

Great list! Definitely second PP on sauteeing aromatics and spices beforehand (I was lazy making my first chicken soup of the year last weekend and skipped this step - the soup was very meh as a result). I would urge you to find some chicken bones and make your own broth - miles better and so easy.

Just like this but if you can add salt, salt as you go starting when you sear the chicken. Also assuming have it, add in 1 tsp - 1 Tbsp of vinegar into the water to balance the flavor and extract maximim flavor and nutrients from bones

The vinegar is a good suggestion.

Sounds good for a basic soup. I'd suggest real salt though, and use distilled water. Also don't overcook the chicken.

Debone the chicken prior to cooking. Easier to remove the bones then when serving.

First, cook the chicken and remove skin. Remove meat and shred, then set aside. Simmer bones for a few hours in water, skimming foam off.
Sauté the onion, celery, carrot with thyme. Add broth from bones. Add chicken. Add chopped parsley.
Cook noodles separately and add when serving.

I see that reading comprehension in not your strong suit. The PP said to debone the chicken PRIOR TO cooking. Why would you remove the bones before cooking the chicken to make broth? Once the broth is made you remove the chicken parts and then debone them before returning to the soup to serve. Sheesh... it's not that hard to comprehend.

How funny, considering it is YOU that has the difficulty with reading comprehension, as the PP said to debone before cooking, so that the bones are easier to remove BEFORE SERVING. LMAO!

This is how I do it.

Add chicken & enough water & chicken broth if you have it to cover chicken &1 teaspoon salt & 1 tablespoon of ginger if you have it

Bring to boil then cook on low fire for 30 mins
Take chicken out to shred then add bones back to pot
Add root vegetables & onion. Cook until root vegetables are soft.
Add shredded chicken, celery & herbs to cook for another 10 mins.
Taste before adding 1 tablespoon of fish sauce ( you wont regret it)
