I’m not vegan but used to cook for one while she was dealing with some health and mobility issues. The meals she requested over and over were:

| We aren’t vegan but do prioritize eating a lot of vegan meals. Usually curry, pasta, beans and greens and rice, soup. |

My meals look like:
Chia pudding with fruit for breakfast Salad with tofu or beans for lunch Greens and grains bowl for dinner In the winter I make a ton of veggie soups and chili. |

We have gone through seasons of vegan eating as a family. It's easy enough for me, as an adult with a relatively sedentary lifestyle, but my boy teen athletes in a growth spurt need to be very intentional about getting enough protein, and enough calories. I think the latter is actually the harder part.
That means, looking for ways to incorporate protein and fat into multiple ingredients. So, maybe that's a soup, made with lots of beans, and edamame/avocado toast on Ezekiel bread Or tofu scramble, baked oatmeal with added nut butter for protein, and a smoothie with high protein almond milk yogurt. |
