What do your meals look like?

I’m not vegan but used to cook for one while she was dealing with some health and mobility issues. The meals she requested over and over were:

Red lentil soup with brown rice

Yep! I’m here and have a family of vegans and I’ve got tons of meals and recipes to share.

We aren’t vegan but do prioritize eating a lot of vegan meals. Usually curry, pasta, beans and greens and rice, soup.

My meals look like:
Chia pudding with fruit for breakfast

Salad with tofu or beans for lunch

Greens and grains bowl for dinner

In the winter I make a ton of veggie soups and chili.

Casseroles, pasta with sauce, sandwiches, soups, curry, asian noodle dishes, Tex mex, stir fry, stews, basically everything.

Roast veg and tofu
Curry lentil/chickpea
Mediterranean lentil/chickpea
Soup with lentil/chickpea/veg
Big salad with veg/legume or tofu

With rice/potatoe/sweet potatoes

Mix and match

Also love focaccia with salad/chickpeas

We have gone through seasons of vegan eating as a family. It's easy enough for me, as an adult with a relatively sedentary lifestyle, but my boy teen athletes in a growth spurt need to be very intentional about getting enough protein, and enough calories. I think the latter is actually the harder part.

That means, looking for ways to incorporate protein and fat into multiple ingredients.

So, maybe that's a soup, made with lots of beans, and edamame/avocado toast on Ezekiel bread

Or tofu scramble, baked oatmeal with added nut butter for protein, and a smoothie with high protein almond milk yogurt.
