Hello everybody. I am looking for some easy recipes, particularly full meal dishes, that are family friendly and delicious.

This is quick and easy . . . serve over rice, use regular broccoli if broccoli rabe isn’t your thing.

Egg roll in a bowl. There are many recipes and variations out there. For me, the ingredients that don’t vary are cole slaw mix, toasted sesame oil, and oyster sauce. I’ve made it with sausage, ground pork, ground turkey, and even with leftover Chinese food.
It’s delicious and has made me happy to voluntarily eat cabbage. I use the leftovers to make Asian-ish pancakes. |
I love this recipe. How many lemons do you normally use? Also, will regular dried oregano work? |

I usually get about 1/4 cup of lemon juice from a medium size lemon (so for the recipe about 2 lemons) Also I boil the chopped potatoes 7 minutes before using them. At the end of the cooking time I take out the chicken from the pan (put in a plate covered with foil) and broil the potatoes for few minutes to give a bit of color |
| Ps I use dried oregano and dry thyme both in powder so you may need to adjust a bit at your taste |
| After many years of avoiding making chicken katsu, I started again and it’s great, hearty (I have teens) and doesn’t feel too cumbersome. Just need rice and a salad as a side, or can make a veggie curry to go with it. Just need chicken breasts, a meat tenderizer, flour, eggs, and panko breadcrumbs (TJs carries them). You can also use bbq sauce or make a katsu sauce with Worcestershire sauce. |
Here’s a base recipe for the Asian-ish pancakes: okonomiyaki. I don’t use breadcrumbs — and often use leftover egg roll in a bowl, adding eggs — with maybe a bit of cornstarch slurry in the eggs. I serve them with hot sauce, but this is a very flexible recipe. I might add shrimp, or whatever adds flavor to the cabbage mix. https://www.loveandlemons.com/okonomiyaki/ |
| Not really a recipe : I buy tortellini or ravioli. I serve it with a marinara sauce and/ or butter with smoked paprika, and grated cheese for anyone who wants it. Add a salad for an easy meal. |
My kids request this regularly, which never ceases to surprise me. |
