Lots of pesto

Just made a big batch of pesto. I’ll freeze some, but would like to find some new recipes or uses for some of it fresh in the next few days. Sandwiches. Pasta. What else?

Put it in salads. I’ve made a spinach-pea-pesto salad, Sweetgreen has a chicken parm pesto salad, or a caprese salad.

My DD likes pesto on flatbread with chicken.

I like to mix pesto with canned white beans to make a dip. Sometimes I add a little lemon juice.

I add a little to pasta salad.
But I would just freeze it in ice cube trays to have on hand later off popping into various things.

We all love pesto
Top3:
on salmon baked in oven
On naan bread with chicken and mozzarella, bake about 4-5 mins
On sandwiches instead of mayo or either mayo
I lied, one more… mixed in with spaghetti. Works great for leftovers. Reheats with pasta better than red sauce/or Alfredo

Mix it in with pasta, couscous or quinoa with some sliced cherry tomatoes.
Or use it as a smear on a caprese tomato and mozzarella sandwich.
