Let's reverse engineer this salad dressing!

Hi, DCUM foodies --

Though Whole Foods is not my favorite place to shop, I was there today around lunchtime and picked up a prepared Brussels sprouts and kale slaw. It was actually quite delicious and would be the perfect thing to take to a potluck we're going too on Sunday. One minor hurdle: I need to figure out how to make the dressing, which was not too sweet, not too creamy, and not too tart -- kinda perfect, for my palate anyway. I have the list of ingredients from the label, but would love your help in figuring out quantities

Here's the ingredient list:
EVOO
white wine vinegar
Dijon mustard
lemon juice
honey
garlic
salt
mustard seed
turmeric

I'm not an intuitive cook, but I'm thinking:
1/2 cup EVOO
2 T vinegar
1 T Dijon
1T lemon juice
1 T honey
2 cloves garlic
1/4 t of each of the spices

Your suggestions are welcome!

That sounds like a good start for the OO and vinegar and lemon juice and garlic (although e cloves will be quite garlicky so start with 1/2 if you are not a big garlic fan). Then I would start with 1/2 the amount of everything else you list and adjust as you go. Once you toss with the greens taste and adjust again - maybe more vinegar and more salt will be needed.

Way too much garlic in your recipe. Consider 1/2 tsp of powdered garlic instead. Also, make sure you let it rest before adjusting for taste so the spices have time to hydrate. You may need more honey to get the sweetness you want.

You’ll need more vinegar+garlic and less oil. Dressing should be strong.

Extra Virgin Olive Oil: 6 tablespoons
White Wine Vinegar: 2 tablespoons
Dijon Mustard: 1 heaping tablespoon
Lemon Juice: 1 tablespoon
Honey: 1 tablespoon
Garlic: 1 clove, minced
Salt: 1/2 teaspoon
Mustard Seed: 1/2 teaspoon
Turmeric: 1/4 teaspoon

No garlic powder.
I would grate 1 clove with a microplane. The honey is plenty, I doubt you'll need more. I would combine all the ingredients, mix well, then add the oil last and mix again. Then adjust. Don't be afraid to add 1T of water, if that calls to you.

Ingredients are listed in diminishing order, with the most abundant ingredient first and the least amount last. (At least they are supposed to be that way, but sometimes a couple are out of order in the later part of the list.)

Have you already checked online for official and copycat recipes? Have you asked the chefs or other staff at Whole Foods? I once asked about a recipe — and someone at WF told me the secret ingredient that I had left out.

Depending on how big your batch is, I'd go with this:

1/3 oil
2 T vinegar
1.5 T dijon
1 T honey
2 t lemon juice
1/4 t salt
1/4 t mustard seed
1/4 t turmeric
1 clove garlic, microplaned or finely minced (or equiv. garlic paste)
