I need some ideas for dinner, and always love hearing about what others are having. What are you having this week? Bonus points for easy/budget friendly. It's just DH and I, which makes things easier, I guess.
Tonight I'm making some frozen pierogis; saw them at Harris Teeter and felt attracted; haven't had pierogis in years, but grew up in the northern midwest so I enjoy them. Will serve with sour cream, fried onions, and a green salad with homemade blue cheese dressing that I made this weekend. I also have an icebox cake I made, so a slice of that for dessert. DD 13 will have the rotisserie chicken heated up in a hamburger bun with cheese. Raw veggies on the side. Chips We were supposed to eat at the pool with friends but now it’s storming…. Sigh |

How do you prepare this? The only way I've ever made white fish at home is in a foil packet with lemon, garlic and capers. I didn't grow up in a house that ate fish, so never learned to make anything but fish sticks and tuna salad, lol. |
Favorite around here is something called fish in crazy water: Toast some fennel seeds in a dry pan Add oil, sliced onions, and sliced fennel bulb and cook til translucent. Salt and pepper. Add cherry tomatoes, cook til burst and juicy, throw in some red pepper flakes if you like that Add the fish and just enough liquid to cover the fish-- use some veggie stock, chicken stock, some wine, or even water. Check salt and pepper again. Simmer til the fish is flaky. |

I make black cod twice a week. I season with salt and smoked paprika, then bake for 11 minutes at 400. Couldn't really be simpler. |
Making pulled pork in the slow cooker (anyone have a recipe?). Then we'll eat it with salads, Hawaiian rolls, sauerkraut, and anything else I can think of until it's done. Might freeze some because it's huge. |

So: Monday (last night) sheet pan chicken fajitas with a corn salsa I made and guacamole Today: chicken cutlets and leftover corn on the cob Wed: ham, red onion, and potato frittata with toast Thursday: grilled vietnamese pork chops and rice Friday: usually is leftovers but there aren't any. Maybe fast food or pizza. |
