Why do some add nonresponsive bragging info when answering a question

Example:
How many times did your kids take the SAT?

Answer:
One and done: 1590

Example:
Did your kid have a summer job?

Answer: yes, a paid research internship with a congressman summer after 9th, capitol hill page after 10th, cancer research after 11th and this summer will be a TA for 3 college classes.

OP here: obviously, I know it’s to brag… But I’m wondering why. This is to a bunch of people who don’t know you or your family, and does it make you feel any better?

It sounds more to me like they're giving you a bunch of context surrounding the information, and you're choosing to be insecure with it.

From the range of responses, the ones you mention are at least somewhat relevant, perhaps useful, to the question. And maybe bragging.

The problematic nonresponses I've noticed:
DD, a solid B+ student, TO (she doesn't test well) looking to major in marine biology and has a $25k scholarship at U Miami. Good, right?

Answer: MIAMI!?!?!? You've go to be smoking crack. Criminals vs Catholics! It will never be in the same tier as Notre Dame. Harvard and Yale better for overall experience. But marine biology?! Good luck to you. Try UCLA.

My DD was one and done for the ACT, but I would never disclose her score (which was great).
