Trying to recreate a salad from Osteria Mozza

I had the shaved Brussels sprouts salad at Mozza and I can't stop thinking about it. Everything we ate was amazing, but this simple salad is what stood out the most.

Any idea what kitchen tool they use to shred the Brussels this finely? It's as thin as angel hair pasta. I think getting the Brussels shaved so finely is the key to making it absorb the dressing and practically melt in your mouth....

In a professional kitchen, they can probably just use a sharp knife. At home with less skill (and not as good knives), mandolin on the thinnest setting. Maybe a food processor with a slicing blade if you have one, but I haven't really liked how thin those are.

Restaurants use mandolines- they produce a much finer slice than a knife. Use a fork to hold the sprouts and consider a cut proof glove! I love my mandoline but I am a little scared of it.

There is a slicing attachment for my food processor that would work for this. I use it to make slaw.
