I do not like sweet things or cold things for breakfast - no smoothies or yogurt. I do often eat yogurt for lunch.
For breakfast, how do I add veggies in. I usually just eat eggs and toast. I'm thinking just adding a sauteed leafy green or peppers to my eggs. Any other ideas? Quick things - getting out the door for work and have two kids. |
Veggie omelet, veggie muffins (make a bunch on the weekend and reheat each morning), scrambled eggs with spinach. |
I add spinach, mushrooms, peppers, onions to eggs.
I'm curious to see what other ideas people have. |
Avocado toast with arugula on top |
For a lazy fix...add salsa. Hit your tomatoes onions and peppers easy to go |
I make vegetable soups and have a bowl for my breakfast every day. There is an endless variety of veggie soups... I make a small pot and eat it for a few days or keep two soups in rotation. Only takes a minute or two to warm up a bowl in the microwave each morning. It may sound weird but this is how many eat in other countries. You can include noodles, rice or beans if you want. If I am still hungry, I will have some yogurt after. |
+1 I make an egg scramble with salsa |
Why don't you just have an extra serving at lunch or dinner or as a snack? |
And cheese! Just don't add the salsa when you have a really sore throat. Ouch. |
Extra good with pepper jack! |
+1 Why make the morning more complicated than it needs to be? |
I like spinach — so: flatbread with spinach and cheese, spinach omelets, leftover spinach soufflé, pre-made spinach balls or spinach bites. I also might do stir fried veggies — heavy on the squash— with sausage. |
Onions and chives. |
Carrot juice. |
I have a veggie omelette most mornings. I do onion and broccoli or spinach and broccoli.
Some shredded cheese on top too. My 12yo has eggs for breakfast too but in a toaster sandwich so had either cut up Tomatoes on the side or a small bowl of fruit. |
