We are getting together with friends on Pi Day (March 14 (3.14)) for a meal. We are looking for ideas for round food items, specifically for a main course. So far, one family has offered to make a Shepherd's Pie. I think there are about 20 of us, and a few vegetarians. Any ideas for a main course that's vegetarian and doesn't include dairy? I can cook it in a round pan and that will be good enough IMO (it doesn't have to be a pie, specifically).

How about a vegan spinach artichoke pizza? Pizza is a good "pie" for pi day.
There are a bunch of recipes for this. If you have people who are low carb, you can use portabella mushrooms for the crust. |
| Ina has a recipe for Vegetable Pot Pie - hers does call for a little cream in the filing and butter in the pastry, but you could adapt on those 2 components. |

| When my daughter was young, she couldn’t have any dairy, so when our family had pizza, we would get her an Amy’s (dairy-free) roasted vegetable pizza from the freezer section. While it wasn’t a typical pizza, it was pretty good. It looks like Amy’s brand now makes a (vegan) cheese pizza, but I don’t know if it’s any good. |
I make mushroom quiche and use unsweetened plain coconut yogurt in place of the milk. Sometimes add cashew cheese too. |

Approximate pi day. As an engineer, I can confidently state that pi = 3.

| I make mushroom empanadas all the time. I use the Goya discs but you could also make pastry dough using crisco instead of butter. Saute onions and garlic in olive oil. Add lots of chopped mushrooms of idffent types, some fresh thyme and salt. When mushrooms are cooked down add some white wine and let that cook off. Cool before you put in the pastry to bake (warm filling will melt the dough). You could easily add carrots and cooked lentils. I often add grated machego but not if you need dairy free. |
