| Anyone have any quick and easy recipes? |
| Chicken quesadillas; you could also spinach to the mix of chicken and cheese. |
| I make chicken pot pie. I use the refrigerated pie crust and make a quick soup on the stovetop with onions, celery, broth, flour and milk. Once it has thickened, I throw in some frozen vegetables (thawed first in the microwave) and the cut-up chicken. Then bake in the oven for about 20 minutes. |
| mash up some avocado with onion and cilantro, then put it with the chicken in a tortilla and wrap it all up. |
| Shred and toss with noodles, soy sauce, sesame oil, scallions, and whatever vegetable you have around. |
| Curry chicken salad. Mix chopped chicken with toasted almonds (Trader Joes has them sliced & toasted), raisins, mayo, apple cider vinegar, curry powder, honey, salt & pepper. Yum! |

| I make chicken salad with it-that five dollar deal at Giant on Fridays is too good to pass up. I always end up throwing some of it away, though. Makes me feel terrible. |

| yey, i like this qustion- EASY and quick, strip the cold chicken, blend it -just enough to see it chopped a little, add lite mayo, mustard and some relish "same amount of each" to have your chicken nice and lumpy in a creamy combination of your three ingredients- this is a fast CHICKEN SALAD, I like it on a slice of whole wheat bread- cold or toasted. hope u like this! |

| Chicken waldorf salad. Cubed chicken, walnuts, green apples, celery, lemon zest, lemon juice and mayo. One of my favorites. Sometimes folks add halved grapes, but I prefer it without. |
| Shred it and put it on little buns with bbq sauce and coleslaw. This is actually even good cold. |

For fall and winter time we usually have it for dinner and than I use the leftovers for chicken noodle soup!! Chicken broth, noodles, veggies, chicken. Yum!
