What to do with leftover rotisserie chicken

Pulled Chicken BBQ Sandwhiches. Shred it, heat up some Sweet Baby Ray's or your favorite BBQ sauce. Add chicken and heat it all up together, mixing well. Put on buns and enjoy! As a PP said, can add cole slaw too.

I make this chicken tortilla soup recipe all the time, and it's perfect with shredded rotisserie chicken:

The prep is really fast, particularly if you're using precooked chicken.

Once it has thickened, I throw in some frozen vegetables (thawed first in the microwave) and the cut-up chicken. Then bake in the oven for about 20 minutes.
Now that's a great idea! I'm going to try that.

Yes- you can use Phyllo dough as crust to make lighter. Martha Stewart Everyday food has recipe we just tried last week. Don't use skim milk - ours was too thin. Also added lemon juice once sauce off stove.
