Best short rib recipe

Anyone have a favorite recipe for short ribs to share? I hate to pick a random one from an internet searching since online recipes are so hit or miss. My kids requested these, have never made at home before!

leftover short ribs (or a properly cut up section of defatted chuck roast for 'boneless short ribs') make an amazing grilled cheese. We make a dupe of the Tatte Short Rib Grilled Cheese Sandwich (Braised short rib, beet-horseradish relish and cheddar on housemade challah) and love it. Super easy, tastes amazing, and helps get rid of the "too many beets" situation in the midsummer garden.

1-2-3-4-5 ribs, always a hit. I buy from H-mart and have the butcher chop them.

I use boneless short ribs for beef bourguignon, but I suppose you’re not asking for that?
I follow loosely the NYT recipe but put everything into the pot at once. Also works really well with pressure cooker

Oh yay! I’m thinking of making it this weekend - for me it’s a dinner party recipe kind of thing.
