| My college kids are home so we have a full house right now, which means that I have to plan out at least 4 meals to get us through tomorrow night. We are doing Cookie and Kate's peanut soup tonight (https://cookieandkate.com/west-african-peanut-soup/) and the kids have requested pancakes for breakfast, but I'm looking for some ideas for lunch and dinner tomorrow. I have found that cooking and baking is a good way to fill time between trips outside, so something that the kids can help out with (lots of chopping and mixing) fits the bill nicely. Anybody have any go-to snow day meals they like to make for days like this? |
| I have a big pot of homemade meatballs and sauce simmering now, using summer tomatoes from the freezer. I made some crusty no knead bread that we will have with it. And apple crisp for dessert and snacking on tomorrow. |

I’m planning things closed through Tuesday. White chicken chili with Rotel dip for extra calories. Big iceberg salad.
Monkey bread tomorrow morning. Sandwiches for lunch. Will fry up bacon for these sandwiches. Vegetable soup too. Spaghetti and meatballs with signature Hawaiian roll garlic bread tomorrow. Roasted broccoli. Egg casserole for breakfast Tuesday. Grilled cheese and tomato soup for lunch. Chicken biscuit casserole for dinner. Spring mix salad. Will make crockpot hot chocolate tomorrow. |
