NYT's Chili Nachos are the NYE meal of choice in my house. A bit of work to prep but meat/sauce can be made ahead of time. They are spectacular.

Standing rib roast, roasted new potatoes, spinach gratin, Yorkshire pudding. Dessert will be a trifle or perhaps a chocolate mousse.
